We kreplach whenever we shlog/hit. Erev Yom Kipur we shlog kaporos and malkos. Hoshana Rabba we klap hoshanos. Purim we klap Homon. We do it because hiting is a form of gvuros and we want to sweeten them with chesed. Kreplach are made from meat covered in dough. As known meat stands for gvuros and dough stands for chesed. We try to something that covers the gvuros with chesed. Chasima & gmar chasima tova.

so where are the esrogim being sold from that are on every other street corner, set up on tables?
