This is only true if we make the assumption that food which has been cooked and then roasted has the same status as food which has only been roasted (But never cooked). The best and easiest way, is to cook the cholent in its entirety before Shabbos and put it on a Crock-Pot on low, filled with water just over the surface. PS when you wake up from your nap Shabbos afternoon the best way to be rid of cholent after effect.
