Cocoa nibs are roasted crushed cocoa beans with a crunchy and nutty texture and a bitter chocolaty taste. They are sold mostly in specialty stores or large supermarkets. You can candy the cocoa nibs or use them as toppings for ice cream and desserts. They are also great when made into brittle, in crusts for an extra burst of flavor and crunch, and they even work well in salads and savory dishes.
In this decadent tart, cocoa nibs provide an incredible crunch to the chocolate crust and the cayenne adds a subtle layer of flavor that compliments the chocolate really well. Prepare for a flavor explosion.
8 chocolate graham crackers, crushed
1 stick butter or margarine, melted
2/3rds cup of cocoa nibs (optional)
1 ¼ cups heavy cream
10 ounces chocolate (can substitute 1 bag semisweet chocolate chips)
1 teaspoon vanilla extract
¼ – ½ teaspoon cayenne pepper
¼ teaspoon salt
2 eggs
¼ cup heavy cream
½ cup chocolate chips
1 tablespoon corn syrup
1 tablespoon warm water
* Preheat oven to 350 degrees
* Mix graham crackers, butter/margarine and ½ cup cocoa nibs and press into 9 inch tart pan or pie pan
* Bake for 10 minutes
* Cover crust with remaining ½ cup cocoa nibs, set aside to cool
While crust is baking, heat cream on medium heat until it starts to simmer, then remove from heat
* Add chocolate chips and mix until smooth, then add vanilla extract, cayenne pepper, and salt
* Let cool for a few minutes. Once mixture is slightly cool, add eggs and mix well.
* Pour the mixture into the crust and bake for 20 minutes or until most of tart is set but the center jiggles. Allow to cool.
For the glaze:
* Heat cream, chocolate chips, corn syrup and warm water and mix to incorporate, then glaze the cooled tart.
Refrigerate until ready to serve

they do choose recipes if u would look at all the ones they have written up u will see some are salads and some are mains and some are desserts – “you cant satisfy all the people all the time, only some of the people some of the time”
iskafya doesnt necesserely mean about food…
Use soy or rice or almond milk instead of cream and add an extra tsp. of vanilla to offset any aftertaste from soy.
If this magazine features more healthful recipes too, I would like collive to choose those recipes. As a grandmother (also a great-grandmother BH) my healthful baked goods are very much appreciated and quickly eaten by kids of all ages. The teens love healthy low calorie snacks, and I feel good having discarded all the old time, heavy maragarine, etc. ingredients. Choose wisely , and you will soon see the difference in making good choices, and, like me, become averse to seeing these unwise foods featured in our media. Labriut!

Yidishkeit is all about food – ein simcha ela Im bosor veyayin, purim, pesach, korbanos, and the list gos on the fact is we face tests every day and we could all work on iskafya etc and chassidus teaches kadeish atzmecha bemutar lach etc but on the other hand we also try beautify mitzvois and do them behidur and this is a way to do just that – its all about balance just like health.

yes healthier recipes are sometimes simpler and easier to make but for the most part they arent – think about the food stamps programs, fast food chains, frozend dinners etc people end up buying whatever is easier and cheaper and healthier choices are not so easy – while we do need to educate people how to make healthy choices and eat better etc we still live in a society/religion where food is not just a part of it, it is one of the biggest parts. I was at a friends house who was hosting a party and served this tart for dessert. The tart was OUT OF THIS WORLD! to rich and fancy for children but great when trying to impress. It’s worth the patchke
obviously this recipe is not meant for everyday meals but once in a while……. as far as healthy desserts while there may be some theres a reason people use this “junk” – because it tastes and looks good!!!

The cayenne pepper gives it a very slight kick which feels like a tingle in the back of your throat, it can be omitted completely or used more liberally for an added kick
