Thank you for explaining, but it’s better just to buy in a kosher store. Even if you bring your own cutting board and knives your placing them on a treif sideboard where treif fish, and Crustacean are being place.

As the Rabbi alluded, if all is washed and cleaned in front of you, given it’s all cold, we should not intimate that this is not kosher or acceptable. There is no bishul/transfer of taste in a cleaned environment, especially if it is dried (shifshuf) thereafter! To then extend this to being concerned about side boards: perhaps you should visit a clean fish store where they regularly hose down the cutting areas? But of course, check with your Rav.
