Pressure cookers are an easy and delicious way to prepare meals in a hurry. The heat of the steam coupled with the pressure inside the chamber cooks food faster than other cooking methods, and creates a caramelization and deep flavor profile that other cooking methods don’t.
Today Beth Warren presents 3 of her favorite pressure cooker recipes: Home-rub Pepper Steak, Almond & Cherry Wild Rice and Lemony Artichokes.

You will need:
Spice Rub
6 tsp chili powder
5 tsp paprika
4½ tsp ground cumin
3 tsp onion powder
2½ tsp garlic powder
1/8 tsp cayenne pepper
Pepper Steak
1 medium onion (chopped) Baby peppers
1 tbsp olive oil
2½ lbs beefsteak
Wild Rice Side
1 medium onion (chopped)
1 tbsp olive oil
1 cup wild rice
2 cup vegetable broth
¼ cup sliced almonds
Salt & pepper
Artichoke Side
28oz frozen artichokes (quartered) ½ cup lemon juice
¼ cup oil
1 tsp garlic powder
1 tsp salt
¼ cup white wine
Directions:
Pepper Steak:
Combine all spice rub ingredients into a small bowl and use 6 tsp of the mix (or more if desired) to rub into the meat.
Place chopped onion and oil into the instapot until soft. Sauté until soft.
Add in beefsteak cook until it browns, add in sliced peppers and cook in the pot on the high-pressure setting for 20 minutes.
Plate and serve along other dishes.
Wild Rice:
Put chopped onion and oil in the instapot and sauté until soft.
Add in wild rice, broth, salt, pepper, cherries and almonds and cook for 25 minutes on the high-pressure setting.
Plate and serve along other dishes.
Artichokes:
Chop artichokes into quarters and place in the bottom of the instapot.
Combine lemon juice, oil, garlic powder, salt and white wine.
Pour mix over artichokes and cook for 20 minutes on the high-pressure setting.
Plate and serve along other dishes.
