Once again, the organizers, security personnel, and benefactors have generated a huge Kiddush HaShem with their efficiency, organization, and safety on behalf of the visitors, this GimmelTamuz. Great thanks to them, and may HaShem bless them with Kol Tuv.

They get taken away and buried or burnt.

After the letters pile up they are taken out and burnt. The Rebbe Shlita Melech HaMoshiach mentioned this custom in the farbregen of 2nd day of Shavuos 5750 saying “they are burnt in a fire who’s flames soar to the Heavens”.

From what I have read, the letters are torn up to show our faith that our prayers were immediately answered upon reading them, and the physical letters are no longer needed, their purpose fulfilled. Therefore, they are eventually burned to make room for new ones. Moshiach Now!

In answer to your question: after the ohel fills up with papers they are then removed and burned near the ohel.
As was the custom even before 3 Tammuz when one of the rebbes secretarys (rabbi b. Klein I believe) would burn the notes in a metal barrel.

What happens to all the letters put personally, email and fax letters printed out, and phone call requests placed by the Ohel? After a while, it would really pile up. So what happens to the letters that were read and torn?
May our prayers be answered and Moshiach come now.
