Grill Your Food: Whenever clients ask me the healthiest way to prepare food, I always tell them to use the grill. Whether making food at home or ordering in a restaurant, grilled is always the best way to go.
Choose Your Greens: All greens are good greens, but the deeper the green the more the nutrients. So when you’re going green, go deep!
Peach Facts: Peaches are loaded with healthy nutrients. They have large amounts of fiber, potassium and vitamin C making them a healthy addition to your diet.
Crunch Time: If you’re already adding a crunch element to your dish, why not add a crunch loaded with nutrients! Pumpkin seeds are a great source of magnesium and taste delicious in salads too.

You will need:
3 chicken cutlets
2 firm peaches (sliced)
1 beet (sliced)
Mixed greens
Fresh dill & chives (chopped)
Pumpkin seeds
Marinade:
¼ cup olive oil
¼ cup soy sauce
¼ cup honey
2 tbsp Dijon mustard Garlic (finely chopped)
Salt & pepper
Dressing:
1/3 cup tahini
2 tbsp honey
2 tbsp sesame oil
2 tbsp apple cider vinegar 2 tbsp soy sauce
¼ cup water
Garlic (finely chopped)
Salt & pepper
Directions:
In a bowl mix together oil, soy sauce, honey, mustard, garlic, salt & pepper.
In separate bowls, pour half of the marinade over the chicken and half over the sliced peaches.
Grill peaches until slightly crispy on both sides. Grill chicken cutlets (3-4 minutes per side) until cooked through then set aside.
For the dressing pour tahini, honey, sesame oil, apple cider vinegar, soy sauce, garlic and water into a mason jar and shake until well combined.
Slice chicken into short strips and place over bed of mixed greens along with grilled peaches and beets.
Sprinkle fresh dill, chives and pumpkin seeds over the top and drizzle dressing over the salad.
Serve and enjoy!
