Doughnut dough can be divided into two camps; cake and raised. The latter contains yeast and needs to rise. Traditionally, both cake and raised doughnuts are fried, hence the tradition to eat doughnuts on Chanukah.
If you’re in search of a lighter baked version of this Chanukah treat, you will be pleasantly surprised by this recipe. These doughnuts bake up just as delicious as the fried version, they are less guilt-inducing, and cleanup is much easier.
To get the proper doughnut shape when baking cake doughnuts, you’ll need a doughnut pan with a rounded bottom to each cup and a post through the middle. Or you can bake these in a doughnut maker (a new kitchen novelty appliance and a great gift idea too!).
Even simpler, you can pour the batter into a muffin pan for doughnut flavored muffins. We tried it this way and the results were great! The “muffins” really had a doughnut taste with a moist texture.
Baked Cake Doughnuts
Ingredients:
2 cups plus 2 tablespoon flour
2 teaspoons baking powder
2/3 cup superfine sugar
1/2 teaspoon nutmeg
1 teaspoon salt
4 tablespoons unsalted butter or shortening
1/2 cup lowfat milk, scalded
1/2 cup plain yogurt
2 teaspoons vanilla extract
2 eggs, beaten
Chocolate glaze-
1 1/2 cups confectioners’ sugar
4 tablespoons cocoa powder
2 tablespoons milk or water
2 teaspoons vanilla
Directions:
Preheat the oven to 350 degrees. Lightly grease a doughnut pan.
Sift the flours and baking powder together into a large bowl or the bowl of a mixer. Whisk in the sugar, nutmeg, and salt. Add the butter and use your fingers to rub it into the dry ingredients as you would in making a pastry crust, until evenly distributed. Add the milk, yogurt, vanilla, and eggs and stir until just combined. Do not overmix or your doughnuts may be rubbery.
If using a doughnut pan: Use a piping bag or spoon to fill each doughnut cup about 3/4 full, making sure the center post is clear. Bake until doughnuts are light golden brown and spring back when touched, 6 to 10 minutes. Let cool slightly before removing from the pan.
If using a muffin pan: Fill each cup Âľ full. Bake until doughnuts are light golden brown and spring back when touched, about 10 minutes. Test with a toothpick inserted into the centers. Let cool slightly before removing from the pan.
For the glaze: Sift together the sugar and cocoa powder in a medium bowl. Slowly stir in the milk and vanilla, a little at a time, to make a smooth, pourable glaze. Dip donuts into glaze then roll in sprinkles.
Dairy. Yields 12 donuts.

These are very simple to prepare and definitely a crowd pleaser. Dairy and fried foods are both traditional Chanukah fare so this recipe is doubly appropriate! We suggest freezing an extra batch ready to be fried because there never seem to be enough.
Mozzarella Sticks
Ingredients:
Mozzarella cheese sticks
Flour
Egg
Panko bread crumbs
Oil, for frying
Marinara sauce, for dipping
Directions:
Remove the wrappers from the mozzarella sticks. Cut each cheese stick in half.
In three separate dishes prepare flour, beaten egg, and panko bread crumbs. Dredge each cheese stick first in flour, then egg, and last the crumbs. To ensure the cheese doesn’t ooze out while frying you can dredge the sticks a second time in the egg and breadcrumbs. Set aside on a pan or plate. Freeze for at least 30 minutes, or you can prepare these days in advance.
Heat 1-2 inches of oil in a frying pan. When oil is hot fry the sticks in small batches. They only need to fry for 1-2 minutes per side, just until golden. Drain on paper towels.
Serve immediately with Marinara sauce for dipping.

In the doughnut recipe it asks for flour twice. Is it the same kind of flour? And if so y not ask for 2cups + 2 tbsp?
Soy milk & soy yogurt are the easiest way to make these parve. If you don’t have access to soy yogurt you can use additional soy milk or soy sourcream.
